Origin story
Shelishli is located in the heart of the Yirgachevi Highlands, one of the world's most renowned coffee regions thanks to its rich volcanic soil and mild, misty climate. Whole cherries are spread on raised African beds for 18–21 days and regularly hand-turned to ensure even drying and a natural fermentation that highlights peach and berry flavors and imparts a unique floral dimension to the coffee.
Taste and hints
Using an 18g dose and extracting 36g in 28-30 seconds you will get:
- Opening notes of ripe peach and a pronounced sugary sweetness.
- Rich berry heart and velvety texture
- Long finish with jasmine flowers and a light touch of cocoa
Barista tip: Let the beans “rest” for 7–10 days after roasting, then experiment with a water temperature of 92°C to achieve the perfect balance between sweetness and acidity.
Storage
