Arabica beans from the Guji Highlands of southern Ethiopia (1900–2100 AD), the Ethiopian Heirloom variety, are naturally dried on African beds to condense the sugars within the bean. The result is a cup with a “raspberry cheesecake” feel—strawberry and blueberry sweetness blended with a smooth chocolate note and a velvety body suitable for filter and espresso.

Origin story
The Guji region is known for its volcanic soil and high altitude, which give the cherries slow ripening and bright, fruity acidity. Drying the cherries whole on raised beds for up to 20 days allows for a natural fermentation that highlights blueberry and strawberry flavors, while the rich soil adds a subtle chocolate layer to the taste.
Taste and hints
Using an 18g dose and extracting 36g in 28-30 seconds you will get:
- Opening notes of deep blue raspberry and sugary strawberry sweetness
- Creamy heart reminiscent of raspberry cheesecake
- Long finish with a hint of milk chocolate and a fruity shine.
Barista tip: Let the beans “rest” for 7–10 days after roasting and then try a water temperature of 92°C to bring out the blueberries more clearly.
